Bibim Guksu (Korean “Mixed Noodles”)

Ingredients

  • 1 serving of thin wheat noodles

  • 2 eggs

  • 1/3rd of a small carrot & cucumber

  • 1/5 tbsp of gochujang

  • 2 tbsp of rice wine vinegar/white vinegar

  • 1/2-1 tbsp of sugar

  • 1 tbsp of tamari/soy sauce

  • 1 garlic clove (minced)

  • 1/2 tbsp of sesame seeds

Instructions

  1. In a pot, bring water to a boil and add in thin wheat noodles (or soba noodles)

  2. In another pot, add 2 eggs (or more to consume later) and bring to a boil and cook until the yolks are fully cooked (7-9 minutes)

  3. Once the noodles are cooked, rinse under cold water to stop them from cooking more and drain

  4. Once the eggs are cooked, peel and slice in half lengthwise

  5. In a small bowl, add in the sugar, tamari (or soy sauce), gochujang, rice vinegar (or white vinegar), sesame oil, sesame seeds and garlic. Whisk the ingredients together to create a sauce

  6. Using a mandoline (please be careful!) thinly julienne 1/3rd of a small carrot and 1/3rd of a small cucumber to use as garnish

  7. In a large bowl, add in the noodles and sauce and combine

  8. Transfer the noodles to a plate, add the garnish and sliced eggs and top with sesame seeds.

  9. Enjoy!
