Japanese inspired Buddha bowl

If you love texture and different flavours you’ll love this Japanese inspired Buddha bowl.

Ingredients

  • 1/2 cup of quinoa

  • 1-1 1/2 cup vegetable broth

  • 1/4 cup of edamame

  • 1/2 avocado

  • 1/2 carrot pickled in rice vinegar (pickled carrots in warm water, rice vinegar, sugar and salt)

  • 1/4 packet of seaweed snack

  • Soy sauce/tamari/coconut aminos

  • 1 tsp of sesame seeds

Recipe

  1. Cook quinoa in 1 1/2 cup of vegetable broth by bringing to a boil and reducing to low heat until the quinoa is fully cooked

  2. Meanwhile, shell edamame (or steam if frozen), thinly sliced pickled carrots, chop seaweed snacks into bite-sized pieces, and slice 1/2 avocado

  3. Add quinoa into a bowl in addition to the remaining toppings

  4. Sprinkle sesame seeds and enjoy!
