Japanese inspired Buddha bowl
If you love texture and different flavours you’ll love this Japanese inspired Buddha bowl.
Ingredients
1/2 cup of quinoa
1-1 1/2 cup vegetable broth
1/4 cup of edamame
1/2 avocado
1/2 carrot pickled in rice vinegar (pickled carrots in warm water, rice vinegar, sugar and salt)
1/4 packet of seaweed snack
Soy sauce/tamari/coconut aminos
1 tsp of sesame seeds
Recipe
Cook quinoa in 1 1/2 cup of vegetable broth by bringing to a boil and reducing to low heat until the quinoa is fully cooked
Meanwhile, shell edamame (or steam if frozen), thinly sliced pickled carrots, chop seaweed snacks into bite-sized pieces, and slice 1/2 avocado
Add quinoa into a bowl in addition to the remaining toppings
Sprinkle sesame seeds and enjoy!
