Mango Sticky Rice

Usually served as a dessert, mango sticky rice is incredibly satiating due to the addition of coconut milk and fibre rich mango.

Ingredients

  • 1 cup of sticky rice

  • 1 can of coconut milk (BPA free can)

  • 1/2 large mango

  • 1/2-1 tbsp coconut sugar

  • Mint & sesame seeds for garnish

Instructions

  1. Soak sticky rice for 2-3 hours, drain and then cook

  2. In a small pan, combine coconut milk and sugar and heat over low heat until the sugar is completely dissolved.

  3. Add in rice and stir gently until rice has ‘soaked’ up all the liquid. Cool the rice before plating

  4. Prepare the mango by slicing it in half, and peeling the outer cheeks. Slice mango to desired thickness and arrange on a plate

  5. Add rice to the plate and add garnish.
