Lemon Chia Cookies

These cookies are the perfect sweet treat/snack to enjoy when you want something sweet but not too sweet. I’ve never been a fan of citrus in my desserts but I think the addition of the almond flour (high in healthy fats) makes this dessert incredibly soft and enjoyable to eat.

Ingredients

  1. 1/4 cup of coconut oil

  2. 1/4 cup of sugar

  3. 1 egg or flax-egg if vegan

  4. Zest of one organic lemon

  5. Juice of one lemon

  6. 1 cup of almond flour

  7. 1 tbsp of wholemeal flour

  8. 1 tbsp of chia seeds

  9. 1/4 tsp of baking soda

Instructions

  1. Zest one lemon (ideally organic as you are using the skin of the lemon)

  2. Mix all the wet ingredients in a bowl (coconut oil, sugar, egg, lemon juice and zest)

  3. Add in the dry ingredients (almond flour, wholemeal flour, chia seeds and baking soda)

  4. Combine all ingredients

  5. Bake for 15 minutes

  6. Allow to cool

  7. Enjoy!
