Hummus-y Bean Based Pasta

I don’t know about you but I’m a big fan of bean-based pasta, they’re so satiating and are a great source of dietary fibre and protein. This dish is extra ‘beany’ because the sauce I used is basically leftover hummus! What a great way to get in your legumes intake for the day!

Ingredients

  • Bean based pasta (edamame, soy, black bean)

  • Hummus

  • 1/3 onion

  • 1 clove of garlic

  • 1/2 large carrot

  • 1/2 cup of hummus

  • 1 small lemon (juiced)

  • 1 tbsp heat-stable oil

  • Fresh herbs

Recipe

  1. Bring water to a boil and cook pasta until it is al dente

  2. Drain pasta but save 1/4 cup of pasta water in case you want to thin your pasta sauce

  3. On an oiled pan cook garlic and onion until onions because translucent

  4. Add in carrots and cook for 5 mins

  5. In another dish add in hummus, juice of one small lemon and slowly whisk in water

  6. Add in hummus mixture and pasta into the pan and cook for 2 minutes

  7. Move pasta into a serving dish and top with herbs
