Blueberry Muffins

A healthy breakfast to consume on to go or to snack on during that afternoon slump.

Ingredients

  • 1 cup of oat flour (I blitzed up wholegrain oatmeal)

  • 1 tbsp baking soda

  • 1 egg

  • 1 tsp vanilla extract

  • 3 tbsp of almond milk

  • 1//2 cup of blueberries

  • 1 small banana (mashed)

  • Pinch of salt

Recipe

  1. In a large bowl, add in almond milk, eggs and vanilla extract

  2. Whisk together until everything is combined

  3. Peel and mash a banana and add into the bowl

  4. Combine all the ‘dry’ ingredients together including oat flour, baking soda and a pinch of salt

  5. Combine both wet and dry ingredients then fold in blueberries, careful not to crush them

  6. Divide the mixture into a muffin tin and ‘bake’ them in the air fryer for 15minutes at 180 degrees
