Blueberry Muffins
A healthy breakfast to consume on to go or to snack on during that afternoon slump.
Ingredients
1 cup of oat flour (I blitzed up wholegrain oatmeal)
1 tbsp baking soda
1 egg
1 tsp vanilla extract
3 tbsp of almond milk
1//2 cup of blueberries
1 small banana (mashed)
Pinch of salt
Recipe
In a large bowl, add in almond milk, eggs and vanilla extract
Whisk together until everything is combined
Peel and mash a banana and add into the bowl
Combine all the ‘dry’ ingredients together including oat flour, baking soda and a pinch of salt
Combine both wet and dry ingredients then fold in blueberries, careful not to crush them
Divide the mixture into a muffin tin and ‘bake’ them in the air fryer for 15minutes at 180 degrees
