Baked Strawberry Oats
Since strawberries are in season (i.e., they’re $1.50 a punnet, a bargain!), I’ve been enjoying them daily as a snack, into salads, smoothies and now in baked oats!
For most, the mornings are the busiest time and we don’t always want to dedicate 15-20 minutes to cook breakfast. So that’s why I’ve shared this baked oats recipe which you can make over the weekend and enjoy every day for the working week.
Oatmeal is incredibly satiating and high in beta-glucans which helps lower cholesterol! The chia seeds are also high in healthy fats and also help to keep us satiated throughout the day. The berries not only add a lovely sweetness but also are a great source of antioxidants.
Ingredients
2 cups of rolled/traditional oatmeal
2 cups of almond milk
1 tbsp of chia seeds
1 punnet of strawberries
Zest of one organic lemon
3 tbsp of honey or maple syrup
1 tsp of baking powder
1 tsp of vanilla or almond extract
1 tsp of cinnamon
Instructions
Pre-heat the oven to 180 degrees
Chop strawberries into small, biteable pieces
In one bowl, mix in all the wet ingredients including the milk, chia seeds, berries, lemon zest, honey and vanilla/almond extract
Add in the rolled oats and then combine
Add the combined oats mixture to a baking dish and bake until fully set (25-30minutes)
Serve with yoghurt, a sprinkle of seeds, crushed nuts and/or extra fruit
