How To Activate Nuts & Seeds

 

Benefits

-        Improves nutrient & digestibility as nuts, seeds & legumes contain enzyme inhibitors & phytic acid which reduce the absorption of zinc, iron, magnesium, calcium, etc

-        Helps activate the sprouting process which improves the availability of minerals, vitamins, fats & proteins

Supplies

-        Nuts/seeds/legumes of choice (e.g. cashews, almonds, pepitas, sunflower seeds)

- water

-1-2 tbsp of salt

Steps

1.     Place nuts/seeds into a large bowl

2.     Dissolve salt in water and pour over nuts/seeds until they are completely covered

3.     Soak for 7-12 hours covered with a cloth on the counter, strain and rinse

4.     Spread over a dehydrator or baking tray and dehydrate for 12-24 hours OR set the oven at the lowest temperature (<65 degrees) until completely dried & crunchy (NOTE: ensure they are not ‘soft’ in the middle as this may result in mould growth)

5.     Store in an airtight container in the fridge or freezer to prevent rancidity & preserve their nutrition

6.     Enjoy crunchy, bioavailable nuts/seeds as a snack on its own, topped on top of salads, to add crunch to stir-fries, chopped on top of your oats or make into your homemade nut milk
